Veggie Quesadillas

This recipe is a great way to get toddlers and young children to eat veggies without it turning into a teeth pulling ordeal! It does take a little prep work, but if your feeling ambitious (like I sometimes do) you can cut up enough of your veggies to keep stored in your fridge or freezer and have them already prepped for your next meal!

Here is what you'll need:

1 package of heart healthy whole grain tortillas (if you can find organic and they don't cost an arm and a leg then grab em)
1 medium to large sweet potato (wash, peel and slice into thin strips, like thin fries)
1 can of organic black beans (drained and rinsed)
1 can of organic extra sweet corn (drained)
1 medium zucchini (washed, and cut in half then sliced in thin strips or thin squares)
1 bag of ready to use organic spinach
2 T of EVOO
1 bag of organic shredded fiesta style cheese (or cheese that your kiddos like. If you can't find organic then go for the brand that promises that no growth hormones are added)

Directions:
In a skillet, warm your 2 T of EVOO on medium and then place your sweet potato to cook for 5 minutes, then place your zucchini and continue to cook for about 7 minutes. When both are soft or to your textural satisfaction, add the corn, and black beans for another 3 minutes. Turn off stove and fold in about a cup of spinach leaves. Fold in until the leaves wilt and soften.

Remove the veggies and place just a dab of EVOO in the skillet and turn on stove to medium. Place your tortilla in skillet and let it heat enough to soften and be easy to fold. Warm on both sides! Add how ever much cheese seems adequate, and let it soften with the heat for a bit. Then add veggies to one side of the tortilla. Turn off skillet and fold your tortilla over, creating an omelet style quesadilla. Slice into triangles and serve when no longer burning hot.

If you insist on seasoning try, Miss Dash garlic and herb. Most children do well without seasoning and learn to love foods and their natural flavor without an enhancing spices.
